Okay… so I cooked today.

Breakfast was fried eggs, bacon, home fries with onions and toast. That lasted till about 4:30 when I got back from the grocery store.

(As a side note… What the heck happened to Cherry Vanilla Diet Dr. Pepper? Lately there has only been one or two twelve packs sitting in a huge otherwise empty shelf at the grocery, while all the other Dr. Pepper seem to be untouched . Now there is not even an empty shelf. If they quit making it there is going to be hell to pay.)

When I got back from the store I fed the dogs, because I understand my place in the chain and then I went to work making Mom’s “Hamburger Pot Pie with Onion Pastry”.

I though I would share it with all of you because it is pretty easy, pretty fast and just plain pretty. It has a very distinctive taste and it turned out just as I remembered Mom’s… most righteously excellent.

Recipe For: Hamburger Pot Pie & Onion Pastry

Ingredients:

Onion Pastry

 
2 Cups Sifted Flour 3/4 Cup Crisco
1 teaspoon Onion Salt 1/4 Cup Cold Water
   
Pie Filling  
1 Tablespoon Crisco 1/4 teaspoon Black Pepper
1 Pound Ground Beef 1/8 teaspoon Oregano
1/2 Cup Chopped Onion 1 Can (10 ounce) Tomato Soup
1 Can Green Beans, Drained 1 teaspoon Salt
1 Tablespoon Sugar  
   

Directions:

Preheat oven to 400° for glass pie plate or 425° for metal pie plate.

Onion Pastry

Sift flour before measuring then spoon lightly into measuring cup and then add to mixing bowl. Cut Crisco into flour with pastry cutter until mixture is uniform. Mix onion salt and water; sprinkle water on flour mixture one teaspoon at a time while tossing flour mixture with fork. Work dough into a firm ball with your hands. Divide dough in half & form two flat circles. On a floured surface roll out bottom crust until 1 1/2 inches larger than an inverted 9” pie pan. Fold circle in half, lift dough into pie plate. Trim dough even with top of pie pan. Roll out top crust in the same way. Add pie filling (see below) and cover with top crust. Trim top crust 1/2 inch beyond edge of pan. fold top crust under edge of bottom crust, seal and flute. Cut small slits in top crust. Bake 25 minutes.

Pie Filling

In a skillet heat 1 Tablespoon Crisco. Add ground beef and onion. Cook just until meat is brown. Stir in green beans, soup and seasonings.
